一人の若い日本人シェフは、どうやってオーストラリアの食文化を変えたのでしょうか?

When Tetsuya Wakuda arrived in Australia, he spoke little English and had no reputation. Today he is recognised as one of Australia’s greatest chefs, proving that friendship between nations can sometimes begin in a kitchen.

ほとんど英語を話せないままオーストラリアへ渡った一人の日本人青年。後に和久田哲也さんは、オーストラリアを代表するシェフの一人となり、料理を通じて日豪の交流を深める存在となりました。

A new life in Australia

オーストラリアで始まった新しい人生

Wakuda was born in Hamamatsu, Shizuoka Prefecture, in 1959. At the age of 22 he moved to Sydney, seeking new opportunities. With little English but a determination to learn, he began working in restaurant kitchens, where his talent quickly became clear.

和久田さんは1959年、静岡県浜松市に生まれました。22歳でシドニーへ渡り、新しい人生を歩み始めます。英語はほとんど話せませんでしたが、料理への情熱と努力で、その才能はすぐに高く評価されました。


Japanese precision meets Australian ingredients

日本の技とオーストラリアの食材が出会う

Rather than simply cooking traditional Japanese food, Wakuda combined Japanese techniques with Australia’s exceptional seafood, meat and fresh produce. His style became known for respecting ingredients while blending influences from both countries.

和久田さんは日本料理をそのまま再現するのではなく、日本の繊細な技術とオーストラリア産の新鮮な魚介類や肉、野菜を組み合わせました。その独自の料理は、両国の魅力を自然に融合させた新しいスタイルとして注目されました。

His Sydney restaurant, Tetsuya’s, opened in 1989 and became one of Australia’s most celebrated dining destinations. It regularly appeared on international lists of the world’s best restaurants and welcomed guests from across the globe until it closed in 2024.

1989年にシドニーで開業した「Tetsuya’s」は、2024年の閉店まで世界中から美食家が訪れる名店へと成長しました。国際的なレストランランキングでも高く評価され、オーストラリアを代表するレストランの一つとなりました。

Wakuda’s contribution extends beyond fine dining. He has received honours in both Australia and Japan for promoting understanding through food and strengthening cultural ties between the two countries.

和久田さんの功績は料理だけではありません。食文化を通じて日本とオーストラリアの相互理解を深めたことが評価され、両国からさまざまな表彰や栄誉を受けています。

Australia’s love of Japanese cuisine did not grow from sushi alone. It also grew because chefs like Tetsuya Wakuda showed Australians that Japanese cooking is built on craftsmanship, respect for ingredients and quiet excellence. Every shared meal continues that friendship today.

オーストラリアで日本食が愛されるようになった理由は、寿司だけではありません。和久田哲也さんのような料理人が、日本料理の繊細さや素材を大切にする心を伝えてきたからです。その一皿一皿が、今も日豪の友情を育んでいます。

    砂漠の真ん中の大きなBig Park Bench

     鉱業で有名のニューサウスウェールズ州西部にあるブロークンヒルでは、訳不明な巨大なベンチがあり、同町の「Big Things」一つである。  100数十件もあるオーストラリア「Big Things」のほとんどが観光及び何らかのPR役割で作られたが、このBig Park Benchは違う。  近くに住む三人の学校の先生が興味で普通の公園用のベンチをそのままの寸法を2.5倍にして作っただけだ。しかし、2002年にあった「風景と背景展示」に出展できた。  この「Big Things」のユニークなところが作られている風景を全部ビデオに撮られて、下記の動画が出来た。

    How Does An Aussie Garden Give Time To Paws?

    One of the highlights of our Aussie garden in suburban Tokyo over the years has been kangaroo paws, except for this year. 一つのハイライトだったはずの東京郊外の我が家のオージーガーデンも、今年ばかりはカンガルーポーが冴えなかった。 We initially planted a couple, but in the darker corner of the garden, and after the first couple of years one died and the other was sickly and did not bloom. 最初に植えたのは2株だったが、庭の暗い隅に置いたこともあり、数年で片方は枯れ、もう片方も弱々しくて花をつけなかった。 We’ve achieved much greater success planting from seed.
